A few days out - interesting world out here!

I've been out of True North for a couple days. Hmmmmm. The thought of limiting my feeding window (some call it Intermittent Fasting) is impossible. I find myself hungry A LOT. It is to be expected. My body is wondering if I'm going to go without food for a long time again. I have been trying to focus on greens - at least a big colorful salad for lunch is easy. Then, I allow myself whatever warm meal that I can arrange with no animal products whatsoever for dinner is OK - trying to get as many veggies in as possible. Fruit and nuts for breakfast and Fruit or veggies for snacks / desserts.

The reality - I've overeaten a couple times - an enchilada casserole I made with a vegan cheese and meat and, on another day, a no-meat pizza with vegan cheese. I've decided I hate these vegan meat and cheese alternatives, so far. They feel like fake food - which is certainly not the point of "whole food/plant based" eating.

I do plan do make some of the meat alternatives, such as one I found made of walnuts, mushrooms, and either cauliflower or lentils, seasoned up like taco meat or italian for spaghetti sauces.

A bright spot, I made a "nacho" cheese to try on my niece a nephews and 1 of them loved it. The others were - "meh" about it but it was much better than you'd think - made with oatmeal, a jar of red bell peppers, liquid smoke, nutritional yeast, corn starch, lemon. Amazing.

I also had success making waffles from just 3 cups rolled oats in the vitamix, blended into a flour, 1 ripe banana and 2 1/2 c water added, and use it just like any other waffle batter. It will be great for my niece a nephew as they are all looking to eat healthy but that gives them an alternative breakfast or dessert that is fast and easy.

Anyhow, I need to stay off of "what I feel like eating." I got into that this morning (I'm traveling). I had an apple and a pear with me. I "felt like" a toasted bagel with cream cheese, tomato, and lemon pepper on it. I went to Sprouts and bought vegan cream cheese, took it to the bagel shop, and ordered the rest. I ended up scraping off the cream cheese and the lemon pepper somehow had a ton of salt in it. Ugh. It was awful and the bagel wasn't all that good for me. So, I kinda blew it - and, again, am learning. Keep it simple - fresh, raw if I can't cook it, FOOD. I should have just gotten a juice or a fruit smoothy. I often crave something hot for breakfast so even just oatmeal from Starbucks probably would have been better when I'm on the road.

So, onward and upward. Hugs all around. I'll be getting mine the next couple of days. Haven't seen the hubby or Colorado based kids and grandkids for nearly 6 weeks. Soooo excited! I'll get to be with the CA based kids in a couple weeks. Life is good. Love to all. xoxo
